I'll save all the horrible details but I can say this last summer that we (my family and I) would have made a great mini-series. It was one of those "WTF can happen next" stretches not to mention expensive. Makes me sick to add it all up. [set5_b/set5_b/puke.gif] It was MUCH worse than last Nov./Dec. time when everything started breaking!

Though I would have to pick a bright side to it...the least of our worries was that our gas grill AND smoker both rusted out and are not scrap metal. I replaced them with one of these. http://pitbarrelcooker.com/

had mostley rain here, i put my smoker in the shed (mini barn ) piped the chimney out the side and Bobs your uncle were smoken.
It's only a 4 shelf bradley. With that baby you have the piggies better run.

How do you like the Bradley? I was looking at those for maybe doing some cold smoking of sausages and jerky.

Wayne, is it a cold smoker or hot? I might have to finally get a smoker now. I like a cold 90 degree one. Put the old salmon in a home made brine and smoke it slowly for a couple days using a my secret mixture of hardwoods. [set5_b/set5_b/sifone.gif]

What I'm getting is a hot smoker/cooker. It works in a range of 275 - 310 degrees with the lid on and regular BBQ temps with the lid off. A purist WILL NOT call the PBC a smoker but it does a good job. I have been watching a lot of videos and conversing with some fellers who own a PBC.

I thought the Bradley was a cold smoker, but after reading the manual it is not. I mistook the thermostat & temp buttons as being able to dial it down to the 90-100 range.

Traeger Grills are well respected & their cold smoker (70-100 degrees) comes complete. Everything else I have found is a kit or mod.

Had the bradley for about 3 months now. It's a compact unit. have done countles ribs, 2lb corn beef and a nice brisket last week and oh yes, Dan smoked salmon with the secret brine, and a maple syrup glaze, my wifes favourite.
As for the bradley its a set and go sysetem. Set your temp.cook time and smoke time. Once every thing is going, get a beer(or soft drink) and sit back. Pros and cons. easy to clean and set up cooking time and temp. light portable having a removable smoker unit. The 4 racks can be lifted out with out droping food.
To get it up to temp. you need to use the smoker burner(with out wood disks) and inside burner at the same time. I found this to work well because the smoke ejects a disk ever 20min.and you would be wasting 2-3 wood disk. You can also vary your smoke time and cook time separate, less smoke or more smoke while cooking. As for the inside temp. the unit will read up to 295-300deg but my portable temp. probe will read 325deg.and no higher. Do i like it? yes for a small unit it works well as i have my gas,wood or charcoal smoker gril for other things.. I was going to get a green egg but found the bradly more to what i was looking for.
